I like to celebrate with food, and the changing of the seasons is no different, and I’ve found that the most delicious way to get into the spirit of the Spring is with a light and nutritious green smoothie. Loaded with vitamins and minerals, a green smoothie is a fast and easy way to look and feel your best, so you can enjoy all that this season of growth and rebirth had to offer.

Spinach Smoothie with Avocado and Apple

This smoothie is silky and full of healthy fats, thanks to the addition of avocado.

Ingredients:

1 ½ cups apple juice

2 cups stemmed and chopped spinach

1 apple, unpeeled, cored, and chopped

½ an avocado, chopped

Directions:

Combine apple juice, spinach, apple, and avocado in a blender and puree until smooth, for about one minute. Add water until you reach your desired consistency. Makes about 2 cups.

Kale Cucumber and Apple Smoothie

This smoothie is loaded with antioxidants, and is a delicious way to get a big dose of vitamins first thing in the morning.

Ingredients:

½ cup water

2 ½ cups green grapes

1 orange, peeled, halved, and seeded

½ lemon, peeled and seeded

½ cucumber, cut into large chunks

½ green apple, seeded

1 cup kale, ribs removed

1 cup romaine lettuce

1 cup fresh flat-leaf parsley leaves

1 cup frozen pineapple or mango chunks

2 cups ice cubes

2 Tbs. antioxidant smoothie mixer (optional)

Directions:

In a blender, combine all the ingredients and puree until smooth. Pour into glasses and serve. Makes about 4 cups.

Carrot Apple Ginger Green Smoothie

Thanks to the addition of fresh ginger, this smoothie packs a slightly spicy punch. You’ll be celebrating St. Patrick’s Day by the first sip!

Ingredients:

2 medium carrots, chopped

1 medium apple, cored

2 large handfuls of baby spinach

1 tablespoon freshly grated ginger root

8 ounces of filtered water

Directions:

Start by adding the liquid to your blender, followed by the soft fruit. Add the greens to your blender last. Blend on high for 30 seconds or until the smoothie is creamy.
